This month Red Meat Lover is going from land to sea!  In this newest video recipe, we’ll show you how to cook Cod loins on a cedar plank.

Cedar Plank

Have you ever used cedar planks for cooking?  If not, you’ve really been missing out because making tasty fish on the grill couldn’t be any easier….or more delicious!

I first discovered cedar plank cooking at Emeril’s NOLA in the French Quarter and I’ve been intrigued ever since.  If you’re someone who is intimidated by grilling fish (I admit, this used to be), then cedar planks are your answer.

Whether you subscribe to us on youtube or this is your first video, you should know that – we love to cook all types of meat, including da fishies.  Although we’re using cod, you could substitute nearly ANY fish for the same delicious results….or as we call it, red meat of the sea.

Cooking fish on the grill has its challenges (like sticking to the grill) but this easy technique is a fast way to make perfect tasting fish EVERY. SINGLE. TIME.

The biggest challenge of cooking fish, is the flip.  Cedar planks are great because they prevent the fish from sticking to the grill or falling apart as you turn it….there is no need to flip these.

In this video we’ll show you:

  1. How to grill fish with cedar planks.
  2. Benefits of cedar planks for cooking fish.
  3. Differences between Cod loin and filet.
  4. Tip for building a great fire, ideal for this recipe
  5. A short blooper at the end…we have a lot of fun making these vids but don’t always get it right on the first try!

When you cook fish on a cedar plank, something happens: 1) Magic.  Magic happens.  2) Unlike cooking fish directly on the grill or in a pan, it won’t fall apart on a cedar plank.  3.) The fish won’t burn and it’s less likely to become dry.  In other words, it’s a nearly fool-proof way to make something delicious.  So go ahead and make the magic happen and give this recipe a shot!

All the best,

Joey

Instructions
  1. Soak cedar planks in water for about 20 - 30 minutes before cooking. They will float so you will need to place a weight on them to fully submerge.
  2. Pat the cod dry with paper towels.
  3. Place cod on planks and coat with olive oil.
  4. Mix salt, pepper, garlic powder, paprika together and coat cod.
  5. Squeeze lemon juice over cod then place lemon slices on top.
  6. Cook using indirect heat for 20 - 30 minutes or until cod reaches an internal temp of 145 degrees or becomes opaque and separates easily with a fork. See video for more cooking details!
