Cowboy Steak in Cast Iron Skillet-Cajun Style!

Cajun Cowboy Steak

Rib-eye is my go to steak when I am in the mood for red meat.  Rib-eye is a great combination of flavor and fat.  Most of the time rib-eye doesn’t need much much more than a little salt and pepper.  I use this rub when I want to switch it up and pull some rib-eyes out that have been in the freezer and can use a little extra flavoring.

This rub combination adds a little kick to your dinner.  Plus the rub goes a long way and I keep it around to use on other pieces of meat or even on some veggies. Here are the ingredients you’ll need:

1 tablespoon of the following:

  • cayenne pepper
  • chili powder
  • garlic powder
  • black pepper
  • onion powder
  • paprika
  • cumin
  • sugar

1 teaspoon of the following:

  • basil
  • oregano
  • thyme

While this may seem like a lot of work for a rib-eye, it is a great way to clear out your pantry of seasoning.  Also, if for some reason you don’t have cumin or thyme or anything in the ingredients, no worries, your steak will still taste great. Lastly, there is usually some leftover Cajun Rub.  I keep the extra and mix it with some ground beef and make Cajun burgers.  It gives it a nice kick!  

Red Meat Lover tip: Start with a steak rub base, like our Big Tasty Steak Rub, then add more spices that your prefer. Add more pepper for a cajun flare, curry powder for a little Indian kick, or whatever you like!

Cooking Steak in a Cast Iron Skillet

If you don’t have a cast iron skillet, then you don’t know what you are missing. The cast iron skillet is the greatest cooking invention besides the discovery of fire itself!

Create dry cowboy cajun rub – In a bowl mix pepper, onion powder, paprika, cumin, basil, oregano and thyme.  Cover both sides of your 22 oz rib-eye steak with your cajun mix-about 3 tablespoons worth.

Mix your oil with onion, vinegar and sea salt in a large bowl (big enough to fit your steak).  Drop your steak in the bowl and cover both sides generously with your oil mix. Throw it in the fridge for 24 hours.  If you are in a rush marinade your steak in the morning and give it at least a few hours.  Allow your steak to get to room temperature before cooking.

When you are ready to cook fire up your stove to med-high/high and put your cast iron skillet on.  Let your skillet heat up for about a minute before pouring in your oil.  Pour some oil in the cast iron skillet.  Just enough oil to cover the bottom of the pan.  When your oil starts to smoke, place your rib-eye in the skillet.  

Cook for 4-6 minutes per side. Your steak should have a beautiful char and it will be delicious.

Enjoy your cajun cowboy steak with an ice cold beverage on a Sunday afternoon while watching a little football.  Feed it to your friends and they will thank you.
