  1. Create dry cowboy cajun mix – In a bowl mix pepper, onion powder, paprika, cumin, basil, oregano and thyme. 
  2. Cover both sides of your 22 oz rib-eye steak with your cajun mix-about 3 tablespoons worth.
  3. Mix your oil with onion, vinegar and sea salt in a large bowl (big enough to fit your steak).  Drop your steak in the bowl and cover both sides generously with your oil mix. Throw it in the fridge for 24 hours.  If you are in a rush marinade your steak in the morning and give it at least a few hours. 
  4.  Allow your steak to get to room temperature before cooking.
  5. Let your skillet heat up for about a minute before pouring in your oil. Pour some oil in the cast iron skillet – just enough to cover the bottom of the pan. When your oil starts to smoke, place your rib-eye in the skillet.
  6. Cook for 4-6 minutes per side. Your steak should have a beautiful char and it will be delicious.
