Crispy Oven Baked Chicken Thighs

Today we’re making crispy oven baked chicken thighs with a quick pan sear. They’re so crispy. You might confuse it for fried chicken. So follow me and let’s turn up the tasty.

Oven Baked Crispy Chicken Thighs

First, we’re going to start by removing the bone from the chicken thigh. Look, you’re either going to have to remove the bone after you cook or before you cook. So why not do it before? Once the thighs are deboned, they lay out nice and flat and allow the chicken skin the get full contact on the pan. This creates a beautiful crispy skin!

We also want to make sure to trim any excess fat or skin that isn’t going to add to the tastiness of the chicken.

Once the chicken is deboned and trimmed, it’s time to season! We actually made a new rub specifically for this recipe! But we have a problem, it doesn’t have a name yet! So we are asking you guys at home to give us some ideas! For example, our other homemade rubs are “JoJo Rub” and “Fiery Red Head Rub“. Anywho, here is what’s in this chicken rub:

Thoroughly season the chicken thighs, starting with the skin. Be generous. Once you season generously with the dry rub, lightly dust the chicken with corn meal. This is going to help get the chicken really crispy and taste just like fried chicken. Important note: only put the corn meal on the skin side.

Next, we preheat our cast iron skillet. You want to make sure it’s nice and hot so the thighs don’t stick. Place the chicken thighs into the hot skillet, skin side down. You don’t need any oil in the pan!

Once the thighs cook for about 5 minutes, transfer them to the oven that’s preheated at 375 degrees Fahrenheit. Cook the chicken thighs in the oven for about 10 minutes. Then flip. Cook until they reach an internal temperature of 165 degrees Fahrenheit, it should only take 3 to 4 more minutes.

Remove the chicken from the oven and let rest for 5 minutes. Take that time to admire the beautifully crispy skin!

As soon as you cut into the chicken, you can see how very juicy it is on the inside. These oven baked chicken thighs are crispy and crunchy on top and filled with delicious, juicy flavor!

Instructions
  1. Preheat oven to 375 degrees Fahrenheit.
  2. Prepare chicken thighs by removing bone and trimming any excess fat or skin.
  3. Generously season the thighs with the homemade chicken rub recipe on both sides.
  4. Lightly season SKIN SIDE ONLY with corn meal.
  5. Preheat cast iron skillet to medium high.
  6. Place thighs, skin side down, on preheated skillet. Cook for 5 minutes.
  7. Place skillet into preheated oven. Cook for 10 minutes.
  8. Flip chicken thighs and cook for 3 to 4 more minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  9. Remove chicken from oven and let rest for 5 minutes.
