deboned and trimmed

homemade chicken dry rub

Instructions
Preheat oven to 375 degrees Fahrenheit.
Prepare chicken thighs by removing bone and trimming any excess fat or skin.
Generously season the thighs with the homemade chicken rub recipe on both sides.
Lightly season SKIN SIDE ONLY with corn meal.
Preheat cast iron skillet to medium high.
Place thighs, skin side down, on preheated skillet. Cook for 5 minutes.
Place skillet into preheated oven. Cook for 10 minutes.
Flip chicken thighs and cook for 3 to 4 more minutes, until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
Remove chicken from oven and let rest for 5 minutes.
