CAST IRON PORK TENDERLOIN PAN SEARED AND OVEN ROASTED

This recipe will show you a simple technique to give the exterior of the pork an amazing crust, without drying it out.  You’ll need a pan or skillet that is oven safe and today we’re using the trusty ol’ cast iron skillet.  It’s the original one pan solution from stove to oven….it’s one of the most versatile pans in the kitchen.  If you don’t own one, you’re really missing out!

One quick reminder before the recipe – pork tenderloin is NOT the same thing as pork loin!  The names are similar and it’s confusing but, they are very different cuts of pork.  The average pork tenderloin is around 1 – 1.5lbs….and it’s much more tender, hence the name tenderloin – get it?  Pork Loin is a much larger cut of meat, usually around 3 – 4 pounds.

HOW TO COOK PORK TENDERLOIN

We have a video that shows how to bake a pork tenderloin.  It’s a great recipe for sure and was a go to before owning a cast iron skillet.  The main benefit of the cast iron skillet is the ability to sear the exterior of the pork tenderloin.  But before searing pork tenderloin, you’ll need to prepare it for the cook.  Just a couple quick steps…

First, the pork tenderloin should be trimmed of its tough silverskin before cooking.  Check out the video for full details.

Next, let tenderloin rest to come to room temp at least 20 – 30 min….I’ve let it rest up to a full hour.

Once the meat is trimmed and rested, pat dry with paper towels.  Now, it’s time to season it….go ahead and use whatever you want, whatever you like.  We used JoJo Rub, which is a simple rub we created for chicken and pork.  The full recipe is available here.

Remember, this is a lean cut of meat – It doesn’t have a lot of fat to it, which means it will need seasoning to add flavor.

Also, because we’re cooking this on the stove AND the oven, you’ll need to preheat oven to anywhere from 425 – 450 Farenheit.

Once the prep is out of the way, it’s time to get cooking.

  1. Heat pan with 1 TBSP olive oil & 1 TBSP butter.
  2. Let the cast iron skillet get nice and hot.  It should be smoking
  3. Place tenderloin in skillet.  It likely won’t fit long so wrap around exterior if needed.
  4. Let it sear for 2 – 3 minutes.
  5. Turn it by on third and let it sear another 2 – 3 minutes
  6. Turn it one final time and let it sear for just 1 minute.
  7. Next, because we’re making oven roasted pork tenderloin, remove the skillet from the stove and place it in the preheated oven.

Oven Roasted Pork

  1. 1.  Remember, the oven should be pre-heated anywhere from 435 – 450 Farenheit.
  1. 2.  Allow the pork tenderloin to roast from 5 – 10 minutes.

The exact cooking time depends on size and it’s really more of an art than science.  You can never go wrong with instant read thermometer and the temperature range provided below.

Pork Tenderloin Temp

Pork tenderloin is a lean cut of meat. That means it can be easily over-cooked and become dry.  The ideal temperature range for pan seared oven roasted pork tenderloin, or any method of preparing it, is an internal temperature in the range of 145 – 155 Farenheit.  Remember, the pork tenderloin temp can raise an additional 3 – 5 degrees F after removing, so I prefer to remove the meat at the lower end of the range, around 145F.

If you’re unsure of the pork tenderloin temp, be sure to check on sooner rather than later.

Once the pan seared oven roasted pork tenderloin reaches the desired internal temperature, remove it from the skillet and let it rest 3 – 5 minutes.  Now, cut into medallions a quarter inch thick and serve!

This easy pork tenderloin recipe also pairs well with sauteed onions, mushrooms, or a rich gravy.

EASY WEEKNIGHT DINNER

Pork tenderloin offers so many benefits it wins high praise from chefs, home cooks, family and friends. Whether you are looking for a quick weeknight dinner or something for that special occasion, this simple pan seared pork tenderloin recipe is the perfect choice.

Our motto – Any cut of meat, any type of heat reflects our motto that there are many right ways to prepare and cook meat.  We would love your feedback in the comments below.  If you like our recipe video, please subscribe to our youtube channel to follow us and receive future updates!
