Prime Rib

Today we’re making a holiday favorite. Can you guess what it is? Prime Rib! If you’re like me, you want to serve your guests a menu that’s simple but really delicious. That’s where the prime rib comes into play. In another video, we talked about the prime rib and what it’s made up of. Today, we have a smaller roast (also called a standing rib roast or just rib roast) that’s about three or four pounds. Cooking a prime rib in the oven is a really simple process that creates a truly a decadent dish. Let’s dig in!

Prepping Your Rib Roast

You can buy rib roasts boneless or bone in. Today I used a bone in rib roast that has been tied up. I asked the butcher to separate the meat from the bone so we had to tie it up to keep it together. Why? Well, when this is done cooking, I’m able to remove the meat from the bones and just slice right into it. Now you might be wondering, “Hey Joey, why not just buy the thing without the bones in it?”. Well, there’s some really excellent rib meat on these bones that have amazing flavor. Therefore, I prefer to buy it on the bone, have it trimmed and wrapped up.

Next, let’s talk about seasoning. It’s really a blank canvas for whatever you like. Have fun with it! Here are the ingredients I used:

  1. BIG TASTY STEAK RUB
  2. Thyme
  3. Oregano
  4. Rosemary
  5. Garlic powder
  6. Extra Virgin olive oil

What you really want to do is create a paste that we can apply to the roast.
If you’re cooking a bigger roast, go ahead and adjust these measurements so that you can season the entire exterior. It’s going to be really hard to over season a large cut of meat like the rib roast. You should be more concerned about under seasoning.

Cooking Your Prime Rib

Once your roast is fully seasoned get it into a roasting pan and then into the oven. I would definitely recommend using a wire rack if you’re cooking a boneless prime rib to allow that air to circulate around the roast as it cooks.

In total, a three/four pound roast should take 1 hour and 25 minutes of cook time. First, cook it for 10 minutes at that 475 degree Fahrenheit. Then kick it down to 325 degrees Fahrenheit for the remainder of the cook. Once it reaches your desired internal temperature, take it out of the oven and let rest for 10 minutes.

Instructions
  1. Preheat oven to 475 degrees Fahrenheit.
  2. Mix dry herbs, steak rub and extra virgin olive oil into a paste You may have to play with the measurement/ratios depending on the size of your prime rib.
  3. Thoroughly cover your rib roast with the paste.
  4. Cook roast in oven for 10 minutes. Re-set oven to 375 degrees Fahrenheit and cook for remainder of time (roughly 1 hour and 15 minutes or until desired internal temperature).
  5. Once prime rib has reached desired internal temperature, pull from oven & rest for 10 minutes.
