Instructions
  1. Preheat oven to 250 degrees.
  2. Let steak sit out for 30 minutes.
  3. Sprinkle kosher salt on both sides of steak.
  4. Place on a wire rack and put it in the oven.
  5. Cook the steak until it is an internal temperature of 115 degrees.
  6. Remove the steak and sear in a cast iron skillet for 30 – 45 seconds on each side.
  7. Let stand for 3 – 5 minutes.
