Let steak rest at room temperature for 30 minutes.
Prepare a bbq grill with the coals on one side of the grill and empty on the other side. The side with the coals will be the direct heat side, and the side without the coals is the indirect side.
Add pepper and a liberal amount of salt to both sides of the steak.
Place steak on the direct heat side for 1 minute, then turn it 45 degrees and cook for another minute. (This will give the steak nice grill marks.)
Flip the steak over and grill in direct heat for 1 minute, then turn it 45 degrees and cook for another minute.
Place the steak on the indirect side of the grill and cover the steak with the vent holes over the indirect side. Cook for 20 minutes until internal temperature is 122 degrees.
Remove steak from grill and let sit for 5 – 10 minutes.
