Reverse Sear THICK 40oz TBone Steak in the Oven and Cast Iron Skillet
Instructions
  1. Let steak sit at room temperature for 30 minutes while oven is preheating to 265 degrees
  2. Season the steak with pepper and a liberal amount of Kosher salt. Make sure the sides of the steak are covered in salt and pepper as well.
  3. Cover a pan with aluminum foil and place a backing rack above the pan.
  4. Place the steak on the rack and cook for 60 – 75 minutes in the oven until the internal temperature is 120 – 125 degrees.
  5. Place olive oil in cast iron skillet and cook over high heat. (You’ll know the pan is ready when the olive oil starts smoking)
  6. Sear the steak until nicely browned on both sides as well as the outside edges.
  7. Serve
