You can often buy whole wings for much cheaper than you can buy the individual cuts and I think they’re usually a little bit better quality, too. What are the three parts of the whole wing?

I always struggled with breaking down wings. However, I visited Chef Mike Johnson at Sugar Fire Smokehouse and he showed us how to make his smoked and fried chicken wings. And he took whole wings like this and broke them down right in front of the camera.
First, get yourself a pair of kitchen shears or a nice, sharp knife. Second, cut off the wing tip. You can reserve the tips to make a really delicious stock to make a really delicious soup. Now, it can be difficult to find the “sweet spot” for separating the flat from the drummie. Chef Mike Johnson’s suggestion is to pop the joint and find out where it begins to separate and then just take your shears/knife to cut through it. It can be a little difficult at first, but practice makes perfect!
