Ingredients

- Let steak sit at room temperature for 30 minutes while oven is preheating to 265 degrees
- Season the steak with pepper and a liberal amount of Kosher salt. Make sure the sides of the steak are covered in salt and pepper as well.
- Cover a pan with aluminum foil and place a backing rack above the pan.
- Place the steak on the rack and cook for 60 - 75 minutes in the oven until the internal temperature is 120 - 125 degrees.
- Place olive oil in cast iron skillet and cook over high heat. (You'll know the pan is ready when the olive oil starts smoking)
- Sear the steak until nicely browned on both sides as well as the outside edges.
- Serve
