A Simple Seasoning for Chicken & Pork

If you recently watched our Crispy Fried Grilled Chicken Wings video, you will notice that we seasoned our wings with a mix of spices we call JoJo Rub.

JoJo Rub is a mixture of finely ground, dry seasonings and powders which are commonly found in most kitchens. This is a rub we created for grilling and baking pork or chicken…but it pairs really well with chicken wings.  We’ve been told by many people that this is their favorite chicken wing seasoning.

This Rub will help remove the moisture from the skin as it cooks, low and slow on the grill, to promote a really crispy, crunchy, and tasty exterior! If you use this seasoning, and cook the wings as shown in the video, then…. you’ll cook wings so crispy you’ll swear they came right out of the fryer!

JoJo Rub

This is a simple Rub recipe consisting of a few basic ingredients:

2 TBSP Seasoned Salt – I use Lawry’s seasoned salt

1 TBSP Paprika

1 TBSP Garlic Powder

1 TBSP Onion Powder

½ TBSP Ground Pepper

½ TSP Mustard Powder (optional)

This recipe will provide enough seasoning for 4 – 4.5 pounds of chicken wings, but flavor to your preference.  If there is any remaining seasoning, I will store it for the next time.  It’s a simple recipe but also convenient to have pre-prepared seasoning ready to go.

As we have mentioned, JoJo Rub is a great addition to chicken of any kind….use it to season before baking and grilling or mix into bread crumbs for frying.  It is also goes really well with pork chops and pork tenderloin.

    Enjoyed your video and want to try your rub and method. I almost turned the video off when I saw you put lighter fluid on the charcoal. Hope you don’t really use that stuff!

    1. Bill – Ha, we’ve gotten quite a few comments about the fluid! We did not start the fire with it, just used it for the effect….with that said, this was the 2nd vid we created so live and learn! It’s not clear in the vid that we didn’t use it to start the fire (chimney). In any event, thanks for taking the time to check out the vid and for your feedback, much appreciated!

    I love smoking ang grilling meat. I did subscribe to your channel, so will be checking out more of your content. I have one question I have been using corn starch where you use baking, have you tried bothor is baking powder better? Thanks Joe Scott N.C
