If you grew up in the Midwest you definitely know what that first bite of a slow cooked pork shoulder tastes like. To us, it’s like a hug for your belly.
Typically, you would use a pork shoulder to make pulled pork. However, today we’ll be cooking this on the stove top. By breaking the pork shoulder down into smaller pork steaks, it’s going to allow it to cook a lot faster. This specific dish is inspired by our friend, Chef Sarah Bradley, from Freight House in Paducah, Kentucky. She broke down an entire pork shoulder into small pork steak, braised them and served them up with some incredible sides. To see Chef Sarah in action, check our her feature on our Meat America Show.
Pork Shoulder Recipe
- Pork shoulder (cut into 3 equal sized pork steaks)
- 1 cup all purpose flour
- kosher salt
- ground black pepper
- 1 teaspoon garlic powder
- 2 tablespoons butter
- 1 tablespoon olive oil
- Half a large onion (sliced)
- 1 teaspoon minced garlic
- 1 cup white wine
- 3/4 cup chicken stock
Onion Gravy Recipe
- Drippings from the pork shoulder recipe
- 1 teaspoon all purpose flour
- 1 cup water

That being said, there in so no shame in our game. The choice is yours, this slow cooker pork shoulder recipe will taste great on homemade or instant mashed potatoes.

- 3 pork steaks or 1 pork shoulder broken into steaks
- 1 cup all purpose flour
- 1 TBSP Kosher Salt
- 1 tsp Garlic Powder
- 1 TBSP Course Ground Black Pepper
- 2 TBSP butter
- 1 TBSP Extra Virgin Olive Oil
- half large white onion sliced
- 1 tsp Minced Garlic
- 1 cup White wine
- 3/4 cup chicken stock
- 1 tsp all purpose flour
- 1 cup Water

- Mix together the flour, salt, pepper and garlic powder.
- Dredge the pork steaks in the flour mixture. Make sure each steak is evenly coated.
- Heat the butter and olive oil in a large sauce pan on high heat.
- Brown the pork steaks for about 2 minutes on each side.
- Remove pork steaks from pan. Through the sliced onions and garlic into the pan and caramelize.
- Add white wine to pan and let reduce. Add chicken stock. Then add the pork steaks back into the pan.
- Reduce heat to low and cover. Let simmer for 90 minutes.
- Remove the pork steak from the pan. Leave the rest of the drippings in pan and return to heat.
- Create a slurry with 1 teaspoon of flour and 1 cup of water. Add to the drippings and stir constantly until it reaches your preferred thickness.
- Return pork steaks to pan and cover in gravy and cook for 5 minutes.
- Whip up some mashed potatoes (from scratch or instant). Smother the mashed potatoes with your braised pork and onion gravy. Enjoy!
