Today we have two beautiful sirloin steaks. Sirloin steak is fairly lean with some pretty thick and edible fat going throughout. We are we’re going to cook these two different ways. One is going to be cooked in the Sous Vide machine and the other is going on the grill. Follow along and find out how to cook steak two ways!
Kitchen Boss Sous Vide Machine
We want to take a moment and thank our friends at Kitchen Boss for sending me this brand new sous vide machine. The first thing that you’ll notice is that they sent us some extra vacuum sealer bags, which is pretty cool in case you forgot to order it with your machine.
You’re going to need the bags and the vacuum sealer for the cooking process. The one thing I really like about the sous vide machine is the sleek modern design and looks really sharp. It also has that removable stainless steel bottom on it, which is really nice in case you make a mess and you need to clean it up. It is also very east to use. You can set it to the temperature you want, drop the meat in, and it just does its thing. The Kitchen Boss sous vide machine is incredibly quiet too.
How to Cook Steak
We seasoned both steaks exactly the same: salt, pepper, garlic and olive oil.
Sous vide steak: Preheat the water to 132 degrees Fahrenheit. We cooked this sirloin steak for 3 hours. You can set your kitchen boss sous vide machine to cook by time or temperature, whatever you prefer! Once the steak is done cooking in the sous vide machine, we are going to sear it on the grill. So we are using a reverse sear method for this steak recipe.
Grilled steak: Time to get your grill nice and hot! Grill your seasoned sirloin steak for a few minutes per side or until your preferred internal temperature. Just remember, friends don’t let friends eat steak well-done! Let your steak rest for about 5 minutes.
Sirloin Steak Taste Test
First, we tasted the sous vide steak. This steak cuts so easily. The tenderness of the sous vide steak compared to the grill steak is night and day. This steak really melts in your mouth. The longer cook time turns the fat into delicious, edible bites.
Second, we tasted the grilled steak. Naturally, it’s a good steak with good taste! It has a little bit of chew that you’re used to finding with a sirloin, but it’s not near as tender as the sous vide steak.

- Use the sous vide machine to preheat the water to 132 degrees Fahrenheit
- Season the steak liberally with salt, pepper, garlic powder and a small amount of olive oil
- Place the steak in the vacuum bag and seal
- Cook the steak in the sous vide water for 3 hours or until it reaches your preferred degree of doneness
- Remove steak from back and pat dry with a paper towel
- Sear each side on grill or cast iron skillet
- Let rest for a few minutes. Enjoy!
